I have nothing to say.
I know I should say something, after all, my Mom has reminded me several times that I haven’t blogged in over a week (she’s retired, I am a main source of entertainment). It’s not that I don’t want to blog, it’s just that nothing interesting is going on. Working from home is stunting my awesome.
It’s not at all.
I’m still pretty awesome.
In fact, working from home is making me way more awesome (if that’s possible), I just don’t go out as much. Ha.
Actually, that’s not entirely true. I do dinners with friends during the week, the gym, boxing… I am just not in a different city Mon-Thurs, so I feel boring (<- and I’m TOTALLY ok with that).
Since working from home, I’ve made it a point to make sure that I still get a minimum of 10K steps in each day. Saturday and Sunday are easy. Mon-Fri is another story. Even when I walk the dog twice and work out it’s hard to get to 10K. Most days I am able to do it… there is maybe one day a week that I say, “today I will be happy with 8500”. But not usually. I fear the family stats on fitbit and I REFUSE to lose my #2 standing.
OH NO. I JUST LOOKED AND MY MOM IS BEATING ME!!! Please hold for a moment while I run up and down the stairs a few times…
(names hidden to protect the innocent.)
I swear… I’ve had 12K or more every night in the last 5 and I am still losing! Those creeps! Tonight I will run extra long so that this doesn’t hold much longer. My Mom is always, “I played “walk it out” on the Wii so I could get more steps…” Retirement must be nice, Mom. Grr….
My brother is always number 1. He runs and bikes and is generally out and about. But honestly, and he admits this, what really puts him over the edge is the fact that he’s a pacer. On conference calls, he paces. Seeing as how I am on video calls, that isn’t possible for me. It would be funny for the person on the other end, but probably not real professional.
Anyway, like you care about these family
It’s rainy and gross here and we had several over-ripe bananas on our counter, so I emailed my Mom asking for her famous banana cake recipe last night and I made it today. The recipe is below – you can thank me later for rocking your world.
Please note, this isn’t really “cake”. As in, it’s not tiered and there’s no icing. But it is a pan of amazing. You should make it and your house will be on it’s way to smelling delicious. I promise.
I also plan to make turkey chili later. I feel so domestic. Isn’t my husband lucky that I am so good at combining foods? Chili and banana cake? I see no issue. I crave. I cook. We eat.
Mom’s Famous Banana Cake (it’s probably not that famous. In fact, it might have come from a generic cookbook. I actually think it was my grandmother’s recipe, but my Mom’s been making it since I was a baby so it’s famous for me. I had never made it before today…).
- 1 stick butter
- 1 ½ c sugar
- 2 eggs, beaten
- 2 cups CAKE FLOUR, sift then measure
- ½ t baking powder
- 1 c mashed very ripe bananas
- ¾ t baking soda in ¼ c sour cream
- Pinch salt
- 1 t vanilla
Cream butter and sugar, add beaten eggs. Sift flour with baking powder and salt. Add flour alternately with sour cream mixture. Add vanilla and then bananas. Bake in a 9” square greased pan at 350 for about 45 – 50 minutes.
I recommend skipping 2 of the steps that I took.
1. Spill cake flour all over the counter
2. Spill toothpicks all over the counter
Those are unnecessary steps.
I am going back to conference calls and Power Point and then I’m going to make chili and eat banana cake. I need to fit in some more steps sometime in there… no more 3rd place!!!
Happy hump day.
